Molasses in the baking process
In connection with changes in modern approaches to nutrition (as an important component of a healthy lifestyle), interest in the use of molasses in cooking is growing. Opinions about the use of black molasses as an additive to the dough in the process of baking bread differ. Some do not consider its use desirable, citing the presence of unnecessary impurities. Others, on the contrary, recommend including molasses not only in the preparation of certain types of bread, but also in other baked goods (in particular, gingerbread). It is believed that such bread is less susceptible to staleness.
